Maple Almond Butter Cups

GLUTEN-FREE & DAIRY-FREE

I whipped up these almond butter cups with whatever ingredients we had on hand at home one night to curb our sweet tooth that evening!


You can make these with any nut/seed butter or even coconut butter. I happened to have Justin’s maple almond butter in the house at the time. These cups are VERY decadent, I’d suggest making a batch and keeping them in the freezer so you can pull out one at a time and enjoy!

They make silicone cup holders that you could use, but I just used a muffin pan to shape and mold these!

I had to make a second batch 2 days later because my husband ate ALL of them and requested more. And he doesn’t really have a sweet tooth like me, so they must’ve been good! ;)

Ingredients

  • 1 cup of gf oats

  • 8 dates + 1 tsp of water

  • 1 cup of maple almond butter (or add 2 tbs of maple syrup to butter of your choice!)

  • 1 cup of dark chocolate chips ( I used enjoy life chips for this recipe)

  • 1 tsp vanilla extract


Instructions

  1. In a food processor or blender-blend up the dates and water to make a paste.

  2. Add in the oats and vanilla extract until a thick ball of dough forms. If it is too dry your dates might be on the smaller side so add a few more or another tsp of water.

  3. Line your muffin tin with parchment paper. And place 1-2 tbs of dough in the bottom of the tin. Flatten the dough out evenly.

  4. In a plastic bag scoop the almond butter into it, seal it, and cut a small hole in the corner of the bag.

  5. Squirt the almond butter evenly over the top of each dough layer. Should be about 1 tbs to cover the dough rounds.

  6. Place the muffin tin in the freezer for 20 minutes.

  7. After 20 minutes you can prepare the chocolate. In a glass bowl melt the chocolate chips for 30 seconds, stir and melt them again for another 30 seconds.

  8. Pull the muffin tin out of the freezer and drizzle the melted chocolate evenly over each cup.

  9. Place the muffin tins back in the freezer for another 20 minutes and then enjoy!

*They can be stored in the freezer and then just pop one out 10 minutes before you want to enjoy it to defrost. :)
