This is a quick and easy Valentine’s Day cookie recipe with a little twist on your traditional chocolate covered strawberries!
They’re gluten-free, dairy free, grain free, and refined sugar free! You could make these with strawberries or cherries, whichever you prefer! If you’re short on time you can also buy Simple Mills chocolate chip cookie mix and add in the fruit of your choice!
Ingredients:
1.5 cups of almond flour
1/3 cup coconut flour
1/3 cup of coconut sugar
2 tsp vanilla extract
1 tsp baking powder
1/4 cup dark chocolate chips (I prefer Lily’s sweetened with stevia)
1/3 cup dried strawberries
1/3 cup coconut oil
1 egg
Instructions:
Preheat oven to 350 degrees.
In a large mixing bowl combine the flour and baking powder.
To that bowl add in the sugar, vanilla, oil and egg. Mix thoroughly.
Once the dough is mixed stir in the chocolate chips and dried strawberries. Don’t be afraid to crush the strawberries up with the spoon.
Lay parchment paper onto a baking sheet and roll out the cookies into 1 TBS size balls and flatten them onto the baking sheet. Recipe should make 8-10 cookies.
Bake for 10 minutes, then cool and enjoy! For extra, melt chocolate and drizzle on top!
