Frozen Oatmeal Jars

Since becoming a mom, I've been trying to find the easiest nutrient-dense meals to make mealtimes effortless. After the little man arrived I decided to try out Daily Harvest delivery meals since I was short on time and energy and their products were the only ready-to-go services that aligned with my everyday diet. I absolutely LOVED everything I tried from them, what I didn't love was the cost of each meal! I decided to take some time on Sunday to meal prep and create similar ready-to-go meals of my favorite breakfast options.

Since I am a nursing mama I am trying to get in oats daily to help maintain my milk supply. I loved Daily harvest frozen oatmeal bowls, so I decided to recreate them! I went to Target and got a pack of 8 oz mason jars to store the oatmeal in. Below is a basic oatmeal base mix along with all of the fun flavors you can add to spice things up! All you do is freeze the oatmeal jars, pop them out in the morning add 1/2 cup of milk, and microwave for 2.5 minutes, and voila you have delicious oatmeal that is SO not boring!

Oatmeal Base Ingredients:

  • 1/2 cup of GF oats

  • 1 TBS ground flaxseeds

  • 1 TBS ground chia seeds

  • 1 TBS sweetener of choice (stevia, honey, maple syrup, coconut sugar, etc.)

Oatmeal Flavor Options:

Chocolate Covered Cherries:

Top the oatmeal off with a couple of frozen cherries, raspberries, 1 tsp cacao powder, 1 scoop of chocolate collagen powder, 1 tsp maca powder, 1 tsp shatavari root & 1 tbs dark chocolate chips (optional)

Banana Bread:

1/2 banana sliced, 1 tsp vanilla extract, 1 scoop of vanilla collagen powder, 1/2 tsp cinnamon, 2 TBS chopped walnuts

Pina Colada:

Top the oatmeal off with frozen chunks of pineapple, 1 TBS shredded coconut, 1 TBS coconut cream or coconut oil, 1/2 tsp cinnamon, 1 scoop of vanilla collagen powder.

Strawberry Shortcake:

Top the oatmeal off with a few frozen strawberries, 1 scoop of vanilla collagen powder, 1 tsp vanilla extract, 1 TBS coconut flakes.

Cinnamon Apple Carrot Cake:

1/4 apple chopped, 2 TBS shredded carrots, 1 TBS raisins, 1 scoop of vanilla extract, 2 TBS chopped nuts, & 1 tsp cinnamon.

Pumpkin Pecan:

2 TBS organic pumpkin puree, 1 TBS raisins, 1 tsp cinnamon, 1/2 tsp ginger powder, 2 TBS chopped walnuts, 2 TBS frozen cauliflower & 1 scoop of vanilla collagen powder.

Optional Add-ins:

Maca powder & shatavari root (for hormone balance)

Sunflower Lecithin (high in choline & good for breastfeeding mamas)

Protein powder in place of collagen

Top with nut butter

Directions:

Layer all of the ingredients in the mason jar, seal it tight and place in the freezer up to 3 months. When ready to eat add roughly 1/2 cup of nut milk and microwave for 2.5 minutes. Pour into a bowl and top with any additional add-ons!
