Avocado Double Chocolate Brownies


You would never even know avocados are the star ingredient in this recipe. They add the perfect amount of moisture and creaminess to these brownies. They are gluten-free and can be made dairy-free, depending on the chocolate you use!


While these brownies aren’t green per se, you can totally decorate them with green avocado frosting in place of the chocolate topping I have pictured! This makes them nice and festive for St. Patrick’s Day! 🍀




Ingredients:

  • 3/4 cup cacao powder

  • 1 ripe avocado

  • 3 TBS coconut oil

  • 1 tsp baking powder

  • 1 tbs vanilla extract

  • 2 tbs maca powder

  • 1/3 cup coconut flour

  • 3/4 almond flour, cassava flour, or oat flour

  • 1/4 cup nut milk

  • 3 eggs

  • 1/3 cup of sweetener (lakanto, coconut sugar, maple syrup)

  • 1/3 cup chocolate chips


Topping:

  • 1/2 cup chocolate chip

  • 1tbs coconut oil

OR

  • 1 ripe avocado

  • 1/2 cup organic powder sugar

  • 2 tbs butter (melted or coconut butter)

  • 1 tsp vanilla extract

  • If too thick add a few tbs of milk


Instructions:

  1. Preheat the oven to 350 F.

  2. In a medium-size bowl combine the wet ingredients: eggs, milk, vanilla, coconut oil, sugar of choice, and mashed avocado.

  3. In a separate bowl mix together the remaining dry ingredients (minus the chocolate chips).

  4. Slowly stir the dry ingredients into the wet ingredients until all incorporated. You can also blend this recipe in a blender to ensure the avocado is completely blended in.

  5. Next fold in the chocolate chips.

  6. Grease an 8x8 baking pan and pour the batter into the pan evenly. May need to spray the back end of a spatula with coconut oil and flatten the batter out.

  7. Bake for 15-20 minutes, or until a toothpick comes out of the center clean.

  8. If you decide to go with the chocolate topping then melt the chocolate chips and coconut oil in the microwave for 3-20 seconds intervals, making sure to stir in between. And then pour evenly on the brownies.

  9. If you decide to go with the green avocado topping then you will want to mix all of the ingredients with a hand mixer or small blender and spread on top of the brownies evenly.

  10. Place the brownies in the fridge to help the topping settle for at least an hour and then cut and enjoy!
